Fishing Alaska

What a graduation gift for Tyler Freed. . .a fishing trip to Alaska! Naturally, Roly needed to accompany him to help him land the fish they were dreaming of catching. Finally, the photos arrived to prove they had been there. Imagine catching a 40 pound King Salmon! But the Halibut came in at a mere 80 pounds! How would you like to pull that one into the boat? Numerous Halibut at 60 pounds, huge Ling Cod and Red Snapper. They ate fish everyday and on their last two days set aside for sight seeing, they decided to go fishing!!!!! Now the problem was how to get the fish home. . .300 pounds! Roly says, they filleted the fish before they arrived back at the dock and had them packed on ice. They were immediately vac packed on shore and quick frozen to retain their freshness. The pros in Alaska told them to always punch holes in the the packages when you begin thawing for cooking. . .this allows the vacuum to escape otherwise it pulls the moisture from the fish in the thawing process and they will dry out quickly in the cooking process. Roly says, it makes a big difference. As you can see, Tyler & Roly were thoroughly enjoying themselves and they got the 300 pounds of fresh fish back home in their Corsicana, Texas freezer. Can't wait to visit and try his famous deep fried tempura Alaska fish!
